Zucchini quiche
Takes 120 minutes | Serves 8 |
A savory and hearty quiche filled with sautéed zucchini, shallots, and garlic, enriched with a blend of parmesan and fontina cheeses, baked in a whole wheat crust.
Ingredients
- 125 g cold butter
- 180 g whole wheat flour
- 1 tbsp cold water
- 400 g zucchini
- 3 tbsp olive oil
- 2 pinches salt
- 1 pinch black pepper
- 2 item shallots
- 1 item garlic clove
- 4 item eggs
- 250 ml cream
- 70 g grated parmesan cheese
- 100 g grated fontina or priest cheese
Steps
- Cut the butter into cubes and blend with flour and water into a dough, press into a 24cm pie dish and chill for 1 hour.
- Preheat oven to 200°C. Slice and sauté zucchini with salt and pepper. Sauté shallots and garlic. Pre-bake crust for 12 minutes. Layer zucchini, onion, garlic, and cheeses in crust. Whisk eggs and cream, pour over. Bake for 30 minutes.
