Waldorf Salad

Waldorf salad is known for its variations, but texture is key. Ensure apples and grapes are similar in size, and cut celery smaller. This recipe includes toasted walnuts, tart apples, celery, grapes, mayonnaise, and crème fraiche, served on Bibb lettuce.

Steps
- Toast the walnuts on a small sheet tray at 175°C for 5-7 minutes. Let cool on the sheet tray, then crumble into smaller pieces.
- Place the diced apple in a large mixing bowl. Sprinkle the sugar over the apples and mix until coated. Add the lemon juice and mix again.
- Add the diced celery, grapes, and half of the walnuts. Mix again.
- Add the mayonnaise and crème fraiche. Mix well. Adjust with Kosher salt if needed.
- Remove the leaves of the Bibb lettuce and place a few on each plate.
- Spoon the Waldorf Salad onto the Bibb lettuce and garnish with the rest of the toasted walnuts.
