Succotash

A classic succotash recipe featuring a medley of summer vegetables, highlighted by fresh or frozen baby lima beans, bacon, sweet onion, okra, garlic, corn, cherry tomatoes, and basil. A perfect celebration of summer's bounty.

Steps
- Cook lima beans in boiling water until just tender, 8 to 10 minutes. Drain and set aside.
- Cook bacon in a skillet until crisp. Transfer bacon to paper towels; crumble and set aside. Reserve drippings in skillet.
- Sauté onion, okra, and garlic in skillet until onion is tender, about 6 minutes. Stir in corn, salt, pepper, and beans, and cook until corn is tender, 5 to 6 minutes. Add butter and melt.
- Stir in cherry tomatoes and basil; sprinkle with crumbled bacon, and serve immediately.
