Spaghetti Vongole

A classic Italian pasta dish combining the simplicity of spaghetti with the rich flavors of vongole clams. An ideal representation of Italian cuisine's focus on quality ingredients and harmonious flavors.
Ingredients
- 1 net vongole clams
- 2 ts olive oil
- 2 item shallots
- 3 item garlic cloves
- 1 ts chili flakes
- 200 ml white wine
- 300 g spaghetti
- 2 ss finely chopped parsley
- 1 item lemon slice
Steps
- Soak vongole clams in cold water with a bit of salt. Discard any broken clams.
- In a large pot with a lid, sauté finely chopped shallots, chili flakes, and garlic in olive oil until soft.
- Add white wine and cook for a few minutes, then add the vongole clams. Cover and steam for about 4 minutes.
- Cook spaghetti for 2-3 minutes less than package instructions. It should be undercooked.
- Transfer the spaghetti to the pot with clam juice, adding cooking water as needed while the pasta finishes cooking.
- Return the clams to the pot, mix well. Season with salt, pepper, and lemon juice. Drizzle with olive oil and sprinkle with parsley.
- Serve the spaghetti vongole immediately.
