Ingredients

  • 2 lbs pork loin roast or pork chops
  • 1 cup creamy peanut butter
  • 1 third cup soy sauce
  • 1 half cup chicken broth
  • 2 tablespoon lime juice
  • 1 tablespoon fresh ginger, minced
  • 2 clove garlic, minced
  • 1 tablespoon red curry paste
  • 1 tablespoon honey
  • 13 oz can coconut milk
  • some garnish Fresh cilantro, chopped
  • 1 garnish red chilies, sliced
  • some serving Cooked jasmine or basmati rice

Steps

    Preparation

    • In a bowl, whisk together peanut butter, soy sauce, chicken broth, lime juice, ginger, garlic, red curry paste, honey, and coconut milk until smooth.

    Assembly

    • Place the pork in the slow cooker and pour the peanut sauce mixture over it, ensuring the pork is well-coated.

    Cooking

    • Cover and cook on low for 6-8 hours or until the pork is tender and easily shredded with a fork.

    Finishing Touches

    • Once cooked, remove the pork and shred it using two forks. Return the shredded pork to the slow cooker and mix with the sauce.

    • Serve over cooked rice, garnished with fresh cilantro and sliced red chilies.
