Ingredients
- 2 lbs pork loin roast or pork chops
- 1 cup creamy peanut butter
- 1 third cup soy sauce
- 1 half cup chicken broth
- 2 tablespoon lime juice
- 1 tablespoon fresh ginger, minced
- 2 clove garlic, minced
- 1 tablespoon red curry paste
- 1 tablespoon honey
- 13 oz can coconut milk
- some garnish Fresh cilantro, chopped
- 1 garnish red chilies, sliced
- some serving Cooked jasmine or basmati rice
Steps
- In a bowl, whisk together peanut butter, soy sauce, chicken broth, lime juice, ginger, garlic, red curry paste, honey, and coconut milk until smooth.
- Place the pork in the slow cooker and pour the peanut sauce mixture over it, ensuring the pork is well-coated.
- Cover and cook on low for 6-8 hours or until the pork is tender and easily shredded with a fork.
- Once cooked, remove the pork and shred it using two forks. Return the shredded pork to the slow cooker and mix with the sauce.
