Salmon Sashimi with Ginger Ponzu

A fresh and flavorful sashimi dish paired with a zesty ginger ponzu sauce.
Ingredients
- 350 g fresh salmon fillet (boneless and skinless)
- 2 items avocados
- 3 items spring onions
- 0.5 items cucumber
- 1 small onion pickled red onion
- 1 pack garden cress
- 50 g salmon roe or trout roe
- 2 tablespoons white sesame seeds
- 75 ml Japanese soy sauce
- 1.5 limes lime juice
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 2 cm ginger
Steps
- Peel and finely grate the ginger and mix with the remaining ingredients for the ponzu.
- Toast the sesame seeds until golden brown in a dry frying pan.
- Cut the salmon into thin, bite-sized pieces. Place on a dish.
- Slice the spring onions into thin rings. Peel and remove the seeds from the cucumber and cut into small cubes. Halve the avocado and scoop out with a teaspoon in chunky pieces.
- Pour half of the soy sauce over the salmon. Sprinkle over spring onion, pickled onion, cucumber, and avocado. Top with salmon roe, cress, and sesame seeds. Serve the rest of the ponzu on the side.
