Salad with corn, black beans, and avocado

A vibrant and healthy salad combining the freshness of corn and avocado with the richness of black beans, spiced with kaffir lime leaves. Perfect as a standalone dish or as a complement to your favorite BBQ or chicken wings.
Ingredients

- 400 g canned black beans
- 4 pcs

- 1 pc red bell pepper
- 1 pc green bell pepper
Steps
- Boil the corn cobs for about 10 minutes in a pot of boiling water until they are tender.
- Drain the water and rinse the corn cobs under cold running water until they are cooled. Let them drain well.
- Hold each corn cob upright on a cutting board, and slice off the corn kernels in strips, from the top to the bottom of the cob.
- Combine the corn kernels in a bowl with the rest of the ingredients, and mix well. Season to taste with salt and pepper, and serve.
- Serve alone or as part of a feast with, for example, chicken wings or BBQ.
