Quick Crispy Duck

A delightful recipe featuring crispy duck breast fillets with a side of charred broccoli and white beans, garnished with fresh orange and crispy sage leaves. This dish offers a perfect blend of flavors and textures.
Ingredients
- 300 g free-range duck breast fillets, skin on
- 2 sprigs sage
- 200 g purple sprouting broccoli
- 1 whole large juicy orange
- 400 g white beans
Steps
- Score the duck skin, rub with sea salt and black pepper. Place the fillets skin side down in a cold non-stick frying pan and heat to medium. Cook for 8 minutes until the skin is golden and crisp.
- Turn the duck over and cook for a further 4 minutes, basting with the fat.
- Pick the sage leaves. Trim and halve the broccoli stems. Top and tail the orange, removing skin and slice. Toss orange slices with red wine vinegar, salt, and pepper.
- Remove the duck to rest. In the same pan, crisp the sage leaves for 1 minute. Cook the broccoli for 4 minutes until charred.
- Pour in the beans with their juice, cover, and cook for 3 minutes. Season to taste.
- Serve by dividing the broccoli and beans between plates, topping with sliced duck, crispy sage, and orange.
