Steps
- Boil water, then add pistachios to blanch for 2-3 minutes. Drain, rinse with cold water, and remove skins.
- Grind pistachios in a food processor until fine. Add sugar and continue to grind to a play dough-like consistency.
- Process until it becomes a smooth paste. Set aside.
- Combine half the milk, sugar, and lemon zest in a saucepan. Whisk until smooth.
- Heat until almost boiling, then whisk in cornstarch. Cook until thickened.
- Turn off heat, add remaining milk and pistachio paste. Chill in the refrigerator until cold.
- Prepare ice cream maker and churn the cold gelato base according to the machine's instructions.
