Pesto

A traditional and fresh raw sauce from the Liguria region in Italy, basilikumpesto is perfect as a topping on toasted bread, in salads, pasta dishes, and with fish or chicken.

Ingredients

  • 1 large pot
  • 3 tbsp
  • 1 small
  • 25 g
  • 20 g
  • 150 ml
  • 1 pinch
  • 1 to taste

Steps

    Preparing the Pesto

    • Toast the pine nuts in a hot pan.
    • Crush the garlic cloves with a pinch of coarse salt in a mortar until it becomes a puree.
    • Add the basil leaves and continue crushing until you get a creamy consistency.
    • Mix in the pecorino and parmesan cheeses.
    • Gradually add olive oil in a thin stream while stirring well.
    • Adjust the taste with salt and lemon juice before serving.
