Pesto

A traditional and fresh raw sauce from the Liguria region in Italy, basilikumpesto is perfect as a topping on toasted bread, in salads, pasta dishes, and with fish or chicken.
Ingredients
- 1 large pot
- 3 tbsp

Steps
- Toast the pine nuts in a hot pan.
- Crush the garlic cloves with a pinch of coarse salt in a mortar until it becomes a puree.
- Add the basil leaves and continue crushing until you get a creamy consistency.
- Mix in the pecorino and parmesan cheeses.
- Gradually add olive oil in a thin stream while stirring well.
- Adjust the taste with salt and lemon juice before serving.
