Omelette Pascal

Making the Easter omelette (or “omelette pascale”) is a tradition in the South of France. The particularity of this dish? It is flambéed with brandy.
Ingredients

- 3 tablespoons sugar for flambéing
- some to taste
- some little
- 1 pinch
Steps
- Beat whole eggs in a dish with sugar and a pinch of salt. Save a little sugar for flambéing.
- Heat the oil in a non-stick frying pan. When hot, add the beaten eggs.
- Cook the omelette for about 2 minutes to your taste, lifting the edges and folding as desired. Remove from heat.
- While the omelette is cooking, heat the alcohol in a separate saucepan.
- Add 3 tablespoons of sugar to the omelette.
- Pour the hot alcohol over the omelette and flambé. Serve immediately.
