Minestrone

A hearty and flavorful Italian minestrone soup, perfect with a side of focaccia.
Ingredients
- 1 unit onion
- 4 tablespoons olive oil
- 150 g bacon or pancetta
- 2 cloves garlic cloves
- 1 teaspoon fresh chili or cayenne pepper
- 2 unit celery stalks
- 2 unit carrots
- 1 can canned chopped tomatoes
- 700 ml vegetable broth
- 200 g cooked white beans or lentils
- 150 g cooked pasta (bows, penne, or macaroni)
- 200 g green beans
- 8 unit small turnips
- 2 tablespoons chopped herbs (chervil, basil, parsley)
Steps
- Fry onion, garlic, and bacon in olive oil.
- Add chili, celery, carrots, tomatoes, and then pour in the broth or water.
- Simmer for about 30 minutes.
- Add beans, pasta, and turnips, and cook for a few more minutes until the vegetables are done.
- Season the soup with salt, pepper, and herbs.
