Ingredients

  • 1 cup chickpeas
  • 1 piece large eggplant
  • 1 cup labneh or Greek yogurt
  • 2 tablespoons tahini
  • 1 tablespoon za'atar
  • 1 half-cup pomegranate seeds
  • 1 sufficient for drizzling olive oil
  • 1 to taste salt
  • 1 to taste lemon juice
  • 1 quarter-cup roasted beetroot
  • 1 piece avocado
  • 1 tablespoon harissa paste
  • 1 fresh herbs for garnish mint and parsley

Steps

    Hummus

    • Blend chickpeas, tahini, lemon juice, olive oil, and salt until smooth.
    • For beetroot hummus, add roasted beetroot to the blend.

    Baba Ghanoush
