How to Make Baguettes

Takes 120 minutes | Serves 3 |

A simple method for making crispy, golden baguettes at home.

Ingredients

  • 350 g cold water
  • 450 g wheat flour
  • 1 pinch salt
  • 15 g fresh yeast

Steps

    Mix the Dough

    • Combine all ingredients by hand until a dough forms.

    First Rest & Stretch and Fold

    • Let the dough rest for 30 minutes.
    • Perform a 'stretch and fold' technique on the dough.

    Repeat the Process

    • Allow the dough to rest again and repeat the 'stretch and fold' process three times in total.

    Shaping the Baguettes

    • Divide the dough into three equal pieces.
    • Flatten each piece into a rectangle, fold it over itself, then roll it into a baguette shape.

    Scoring & Baking

    • Make a few slashes on the surface of each baguette.
    • Dust with flour.
    • Bake at 235°C (fan oven) for about 20 minutes until golden brown.
    • Just before baking, toss a cup of water into the oven to create steam, which helps develop a crispy crust.
