Takes 120 minutes | Serves 3 |
A simple method for making crispy, golden baguettes at home.
Ingredients
- 350 g cold water
- 450 g wheat flour
- 1 pinch salt
- 15 g fresh yeast
Steps
- Combine all ingredients by hand until a dough forms.
- Let the dough rest for 30 minutes.
- Perform a 'stretch and fold' technique on the dough.
- Allow the dough to rest again and repeat the 'stretch and fold' process three times in total.
- Divide the dough into three equal pieces.
- Flatten each piece into a rectangle, fold it over itself, then roll it into a baguette shape.
- Make a few slashes on the surface of each baguette.
- Dust with flour.
- Bake at 235°C (fan oven) for about 20 minutes until golden brown.
- Just before baking, toss a cup of water into the oven to create steam, which helps develop a crispy crust.
