Giaourtlou Kebab

A traditional Greek kebab served with warm pita, Greek-style yogurt, and a rich tomato sauce.
Ingredients
- 454 g ground beef
- 454 g ground pork
- 2 slices stale bread
- some to soak bread water
- 250 g grated onion
- 125 g grated ripe tomato
- 1 piece large egg
- 2 cloves garlic
- 0.5 tsp ground cumin
- 0.5 tsp ground allspice
- 1 Tbsp dried Greek oregano
- 0.5 tsp baking soda
- 1.5 tsp ground pepper
- 4 tsp sea salt
- 60 g butter
- 125 g diced onions
- 375 g tomato puree
- some to taste salt
- some to taste pepper
- 4 pieces pita breads
- 375 g full-fat Greek-style yogurt
- 125 g chopped fresh parsley
- 1 tsp sweet paprika
Steps
- In a bowl, mix the ingredients for the kebab mixture: ground beef, ground pork, softened and squeezed stale bread, grated onion, grated ripe tomato, egg, minced garlic, ground cumin, ground allspice, dried Greek oregano, baking soda, 1/2 tsp ground pepper, and sea salt. Form into hamburger-like shapes and refrigerate until ready to grill.
- Start the tomato sauce. In a saucepan over medium-high heat, add butter and sweat diced onions for about 10 minutes. Add tomato puree, salt, and pepper. Simmer for another 15-20 minutes or until the sauce thickens. Adjust seasoning and set aside.
- Form the meat mixture into sausage shapes. Preheat gas or charcoal grill to medium heat. Brush and clean grill surface, then lubricate with a vegetable oil-treated towel. Grill kebabs.
- Brush pita bread with olive oil and warm on the grill. Remove pita and kebabs for assembly.
- Cut pita into 4-5 strips and place on a plate. Top with 3 kebabs per portion. Add yogurt, then tomato sauce. Garnish with chopped parsley and paprika.
