Ingredients
- 6 item tomatoes
- 1 item cucumber
- 1 item bell pepper
- 1 small red onion
- 2 cloves garlic
- 45 ml olive oil
- 30 ml red wine vinegar
- 1 tsp salt
- 1 tsp pepper
- 1 pinch cayenne pepper
- 100 ml ice-cold water
Steps
- Combine tomatoes, cucumber, bell pepper, red onion, and garlic in a blender. Blend to desired consistency.
- Transfer blend to a bowl. Stir in olive oil and red wine vinegar. Season with salt, pepper, and cayenne pepper. Thin with ice-cold water if needed.
- Chill in refrigerator for at least an hour.
- Serve cold, garnished with diced cucumber, bell pepper, and a drizzle of olive oil.
