An easy and fresh zucchini noodles recipe featuring zucchini, tomatoes, basil, parmesan, and garlic. Ready in just 20 minutes, it's a quick and flavorful dish perfect for a healthy meal. For a vegetarian version, simply omit or substitute the parmesan.

Steps
- Trim and spiralize the zucchini into long noodles about the length of spaghetti.
- Add olive oil, garlic, and red pepper flakes to a large, deep skillet on medium heat. Once the oil bubbles around the garlic, add zucchini noodles.
- Toss noodles with pasta tongs and cook until al dente, about 5 to 7 minutes. Stir in tomatoes, basil, and parmesan cheese, then cook for 1 minute. Transfer to a serving dish, leaving liquid in skillet.
- Bring the skillet's liquid to a simmer. Mix cornstarch with cold water and whisk into simmering liquid until it thickens to a sauce, about 1 minute. Season with salt.
- Pour the sauce over the zucchini, tomatoes, and basil. Finish with more parmesan on top and serve immediately.
