A delightful festive gnocchi recipe featuring homemade gnocchi, cavolo nero, garlic, and a blend of Gorgonzola and walnuts, perfect for a vegetarian feast.
Ingredients
- 800 g Maris Piper potatoes
- 80 g plain flour
- 1 item free-range egg
- 6 cloves garlic
- 400 g cavolo nero
- 50 g Parmesan cheese
- 6 tablespoons extra virgin olive oil
- 50 g shelled unsalted walnuts
- 100 g Gorgonzola cheese
Steps
- Wash and chop potatoes into chunks, boil until tender, drain, steam dry, mash, and cool.
- Mix in flour, add egg yolk, season, and knead into a pliable dough. Divide and shape into gnocchi pieces.
- Boil water, cook garlic and cavolo nero leaves, then blend with olive oil and Parmesan to make the sauce.
- Cook gnocchi in boiling water until they float. Combine with sauce, sprinkle Parmesan, walnuts, and crumble Gorgonzola on top.
