Dakos Salad

A refreshing Greek salad featuring Cretan rusks, tomatoes, capers, olives, and vegan cheese, dressed with olive oil and red wine vinegar.
Ingredients
- 20 units sweet cherry tomatoes
- 2 units medium tomatoes
- 1 tbsp capers
- 8 units Kalamata olives
- 0.5 units red onion
- 6 units Cretan rusks or other crispbread
- 1 tbsp fresh parsley
- 1 tsp dried oregano
- 100 g vegan cheese (feta or soft cheese)
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp black pepper
- 1 tsp salt
Steps
- Break rusks into smaller pieces with a hammer or use your hands.
- Place chopped tomatoes, capers, and olives in a large mixing bowl.
- Mix olive oil and red wine vinegar together and pour over the mixing bowl’s contents.
- Throw in the broken rusks and mix well.
- Season with black pepper and possibly a tiny bit of salt – go easy as capers, olives, and cheese all have salt in them already.
- Place in a salad bowl, dot with vegan cheese, and sprinkle with dried oregano and fresh parsley.
