Ingredients

  • 1.5 kg whole chicken, cut into 10 serving pieces
  • some kosher salt
  • some freshly ground black pepper
  • 480 g potato starch
  • some vegetable oil
  • 7 garlic cloves, thinly sliced
  • 3 jalapeños, thinly sliced
  • 60 g dark brown sugar
  • 60 ml soy sauce

Steps

    Preparation

    • Season chicken pieces with salt and pepper, coat with potato starch, and set aside.
    • Heat oil in a Dutch oven to 180 C for frying.

    Frying

    • Fry chicken in batches until lightly golden, transfer to paper towels.

    Glazing
