Ingredients
- 1.5 kg whole chicken, cut into 10 serving pieces
- some kosher salt
- some freshly ground black pepper
- 480 g potato starch
- some vegetable oil
- 7 garlic cloves, thinly sliced
- 3 jalapeños, thinly sliced
- 60 g dark brown sugar
- 60 ml soy sauce
Steps
- Season chicken pieces with salt and pepper, coat with potato starch, and set aside.
- Heat oil in a Dutch oven to 180 C for frying.
