Classic Fish'n Chips

A traditional British dish featuring crispy battered fish served with golden chips, accompanied by homemade tartare sauce.
Ingredients
- 1 L sunflower oil
- 300 g whiting, ling, pollock, haddock or cod fillets
- 2 unit
- 2 tsp malt vinegar
- 75 g self-raising flour
- 25 g
- 1 pinch ground turmeric
- 125 g cold lager or fizzy water
- 4 unit cornichons
- 1 tsp
- 1 unit
- 1 handful parsley leaves
- 5 tbsp mayonnaise
Steps
- Cut potatoes into chips, soak, boil with vinegar, then chill.
- Combine cornichons, capers, shallot, parsley, mayo, and salt for tartare sauce.
- Mix flours, turmeric, salt, and beer or water for batter.
- Fry chips in oil until golden and crisp.
- Dust fish in flour, then batter, and fry until deep golden and crisp.
