Classic Bacalao

A simple and classic version of the beloved bacalao stew, highlighting the importance of using high-quality olive oil. This recipe offers an option to include olives for those who enjoy them in their bacalao.

Steps
- Soak the dried cod in water overnight, following pack instructions for soaking.
- Prepare the vegetables and cod as described.
- Fry onions, chilli, and garlic with paprika in olive oil until soft.
- Add tomato purée, sugar, tinned tomatoes, and water. Add bay leaves and stir well.
- Add sliced potato and fish to the pan, ensuring they are covered. Season with pepper.
- Cover and simmer for 45 minutes, then season with salt as needed. Simmer uncovered for 5-10 minutes to reduce.
- Serve hot with basil and optionally green olives on top.
