Steps

    Preparing the Bacalao

    • Soak the dried cod in water overnight, following pack instructions for soaking.
    • Prepare the vegetables and cod as described.
    • Fry onions, chilli, and garlic with paprika in olive oil until soft.
    • Add tomato purée, sugar, tinned tomatoes, and water. Add bay leaves and stir well.
    • Add sliced potato and fish to the pan, ensuring they are covered. Season with pepper.
    • Cover and simmer for 45 minutes, then season with salt as needed. Simmer uncovered for 5-10 minutes to reduce.
    • Serve hot with basil and optionally green olives on top.
