
Clafoutis

A classic French dessert made with sweet cherries and blueberries in a light, custard-like batter.
Ingredients
- 5 g unsalted butter
- 200 g sweet cherries, pitted
- 100 g blueberries
- 3 pieces eggs
- 100 g superfine sugar
- 95 g all-purpose flour
- 30 g unsalted butter, melted
- 240 ml whole milk
- 1 tsp vanilla extract
- 5 g powdered sugar
Steps
- Preheat oven to 180°C and grease a 23 cm round baking dish with unsalted butter.
- Evenly distribute the pitted cherries and blueberries in the greased dish.
- In a bowl, whisk eggs with 50 grams of sugar until combined.
- Add the remaining 50 grams of sugar and whisk until pale and slightly frothy.
- Gradually sift in the flour while whisking to avoid lumps.
- Add melted butter, milk, and vanilla extract. Whisk until smooth.
- Pour the batter over the fruit in the baking dish, keeping the fruit evenly distributed.
- Bake for 35–40 minutes until set and lightly golden. A toothpick should come out clean.
- Let the clafoutis cool to room temperature.
- Dust with powdered sugar, slice, and serve.
