Clafoutis

A classic French dessert made with sweet cherries and blueberries in a light, custard-like batter.

Ingredients

  • 5 g unsalted butter
  • 200 g sweet cherries, pitted
  • 100 g blueberries
  • 3 pieces eggs
  • 100 g superfine sugar
  • 95 g all-purpose flour
  • 30 g unsalted butter, melted
  • 240 ml whole milk
  • 1 tsp vanilla extract
  • 5 g powdered sugar

Steps

    Preparation

    • Preheat oven to 180°C and grease a 23 cm round baking dish with unsalted butter.
    • Evenly distribute the pitted cherries and blueberries in the greased dish.

    Batter

    • In a bowl, whisk eggs with 50 grams of sugar until combined.
    • Add the remaining 50 grams of sugar and whisk until pale and slightly frothy.
    • Gradually sift in the flour while whisking to avoid lumps.
    • Add melted butter, milk, and vanilla extract. Whisk until smooth.

    Assembly and Baking

    • Pour the batter over the fruit in the baking dish, keeping the fruit evenly distributed.
    • Bake for 35–40 minutes until set and lightly golden. A toothpick should come out clean.

    Finishing Touch

    • Let the clafoutis cool to room temperature.
    • Dust with powdered sugar, slice, and serve.
