Steps

    Preparation

    • Peel the carrots and grate them coarsely.
    • Wash the lime, grate the peel, and squeeze out the juice.
    • Cook the carrots, lime peel and juice, ginger, water, sugar, and lime leaves on low heat for about 45 minutes until it reaches a jam consistency. Skim well with a slotted spoon.
    • Pour into clean and sterilized glass jars, and store in a dark and cool place.
