How to make BBQ Sauce

A rich and flavorful BBQ sauce that combines the sweetness of raisins with the depth of bourbon, coffee, and cola, balanced with a variety of spices and a tangy touch of lime.
Ingredients
- 30 g butter
- 5 ml olive oil
- 450 g onion
- 5 each garlic cloves
- 40 g jalapeƱo chili
- 90 g raisins
- 120 ml bourbon (optional)
- 120 ml strong coffee
- 120 ml cola
- 120 ml ketchup
- 60 ml soy sauce
- 60 ml balsamic vinegar
- 30 g brown sugar
- 30 ml Worcestershire sauce
- 30 ml hoisin sauce
- 15 g Coleman's mustard powder
- 4 g ground allspice
- 4 g freshly ground black pepper
- 4 g cayenne pepper
- 2 g ground paprika
- 1 each lime
- 60 ml sesame oil
Steps
- Heat the butter and olive oil over low heat in a large pot.
- Add finely chopped onion, garlic, and chili as well as raisins. Cover and simmer until the onions start to caramelize at the bottom of the pot (about 5 minutes), stirring occasionally.
- Pour coffee and cola into the pot, and dissolve all the bits that have stuck to the bottom of the pot using a wooden spoon. Reduce the liquid by about 50%.
- Add ketchup, soy sauce, balsamic vinegar, brown sugar, Worcestershire, and Hoisin Sauce, and simmer for about 5 minutes.
- Add mustard powder, allspice, pepper, cayenne pepper, and paprika and simmer for another 10 minutes.
- Blend the sauce until smooth, then add lime juice and sesame oil. Taste and adjust to suit your preference.
- Pour the sauce into jars with lids. The sauce will keep in an airtight container in the refrigerator for up to a month.
