Apple Muffins

Delicious apple muffins with a tender crumb, filled with diced apples and topped with a cinnamon sugar crust.
Ingredients
- 180 g sugar
- 180 g butter or margarine
- 180 g all-purpose flour
- 3 eggs
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 0.5 dl milk
- 3 apples, diced
- 1 tsp cinnamon
- 1 tbsp sugar (for topping)
- 1 tbsp lemon juice (optional, for apple preparation)
Steps
- Cream the butter and sugar until light and fluffy. Preferably use room temperature butter or margarine.
- Beat in the eggs, one at a time.
- Sift in the flour, baking powder, and vanilla sugar, and mix until you have a smooth batter.
- Stir in the milk until fully incorporated.
- Distribute the batter into about 12 large muffin cups. Fill the cups almost to the top and press in as many apple pieces as you can.
- Sprinkle cinnamon and sugar on top.
- Place the muffins in the middle of the oven at 180°C (356°F) and bake for 25-35 minutes, or until a toothpick inserted in the center comes out clean.
- To prevent the apples from browning after peeling, place the pieces in a bowl of water with a bit of lemon juice added.
